You can choose from several vocations or classes in Dragon's Dogma 2. However, you're limited to just one that's active for the most part. How to find Newt Liqueur to unlock the Warfarer in Dragon's Dogma 2
The Arisen-only Warfarer vocation is unlocked upon completing a quest called The Sotted Sage. The goal is to head to the Volcanic Island Camp Hot Springs. That's where you can give an NPC named Lamond the alcohol that he's craving for: Newt Liqueur. Do note that it's going to take you a while to reach this particular point in the game, as you can see below:

The Sotted Sage: Where to find Lamond
This journey to unlock the Dragon's Dogma 2 Warfarer class takes you across the southwest passage from Bakbattahl and through the Drabnir's Grotto dungeon, just so you can finally arrive at Agamen Volcanic Island. Take note that you'll encounter a couple of NPCs close to the region's border: Cliodhna and Gautstafr. Helping them not only unlocks the Magick-Archer class, but their own quest leads you to Lamond's location.
